Did You Know??
Taza makes their chocolate right in their Somerville factory! They start with raw, whole cacao beans, roast and winnow the beans, grind and refine the nibs, temper and mold the chocolate, and cool, wrap and ship out the finished bars. (I didn't know Willy Wonka lived right down the street!) They call this process "bean to bar."

Taza was founded after cofounder Alex Whitmore traveled to Oaxaca to steep himself in the history and culture of Mexico. There, he was compelled by the minimal processing and traditional method of stone grinding the beans… so much so that he was moved to start a business dedicated to crafting artisan, Mexican-style chocolate in the United States.
